Ralph's brother Larry was married to Evelyn who was an excellent formal cook. Occasional Thanksgiving dinners at Evelyn and Larry’s home were always delicious and prepared meticulously. Only one of Evelyn's recipes survived on paper in my file, but I remember that it was delicious.


Recipe


EVELYN'S CHOCOLATE APRICOT TORTE
Preheat oven to 425 degrees F
place one rack in the center

2 1/2 c semisweet chocolate chips
2/3 cup butter
4 eggs separated
1 T flour
1 T sugar

Melt chocolate and butter and blend together.

Beat egg yolks until thick lemon color.

Fold in melted chocolate/butter.

Stir in flour and sugar

Beat egg whites until stiff and fold into the chocolate mixture.

Turn into a 8" spring form and bake 15-20 minutes

Cool

prepare Apricot Filling

1/2 c sugar
1 pkg. apricots
2 T corn syrup
1 tsp hot water

Combine into double boiler until melted.

Remove from heat and blend until smooth.

Frost over top of torte before serving.

Decorate with blanched almonds.
